為何廚師對冷凍這麼嚴格要求？

在室溫內(18/25°C) 存放食物可使細菌在數子時內大量繁殖，破壞食物質素，所以選擇一個適合的雪櫃是理所當然的。

Why is cooling so important to a chef or cook? Because it means that perishable, fresh or otherwise prepared foodstuffs can be stored and kept in ideal conditions.
The ambient temperature (18/25°C) in fact provides a perfect breeding ground for bacteria, even more productive when the protein content of the food is high. Milk, fish, meat, custards, broth, sauces and roasts, left at room temperature are, within only a few hours (3or 4), swamped with large nubers of harmful micro-organisms.

  • 雪櫃內外全部采用優質不銹鋼AISI304制造，櫃身配以不銹鋼可調腳。
  • 全部雪櫃型號配銷，打開門時，雪櫃亮橙，另有微型開關停止蒸發器風扇轉動，減少冷量往外流失。
  • 制冷機組可選配環保型和環保冷媒R134A或R404A。
  • 櫃內可容納2/1烹飪托盤，保證櫃內空間最佳使用。
  • 電子溫度控制冷涷系統，可自動溶霜，保持設定的櫃內溫度，同時雪櫃配有濕度控制，可控制櫃內濕度，使食物保持水份。另外蒸發器的設計采用雙向式，使冷量分布均衡和快速。
  • 雪櫃配以化水發熱線和水盒，可把蒸發器排出的水份蒸發，不用接駁地面排水。
  • 雪櫃隔熱以50厘米厚聚氨基甲酸乙酯組成，能有效地保持櫃內溫度。
  • Constructed entirely in AISI304 stainless steel, the base, black and ceiling, the cabinet mounted on adjustable fleet in AISI 304 stainless steel.

Control Panel

Fish Compartment

With a high degree of humidity, the temperature in the compartment is maintained at all times. Fitted with tubs specially designed to store fish.

Compressors

Compact and highly reliable, these compressors have been designed and constructed for use with the new HFC gases.

New HFC Cooling Gases.

EEC Directives prohibit the use of CFC gases, responsible-together with other elements-for damage to the ozone layer surrounding our planet. All the refrigerators in the Mareno range operating at temperatures between +2 and -2°C use hydrofulorocarburide gas HFC-R134A; freeszers and storage containers run on R404A gas.

Doors

If opened less than 90°C, the door closes automatically, if opened, on the other hand, at a wider angle, the door remains open in this position. The doors are fitted with handy reversible hinges.
雪櫃門在開啟小于90度角時，櫃門會自動關閉，如櫃門開啟大于90度角時，櫃門會停留于開啟位置。

Rounded Compartment And Rack Supports

The gently rounded corners on the refrigerator compartment facilitate cleaning and are well in keeping with health standards. The racks can be removed without the use of tools.
雪櫃內膽和底盆全部采用圓角設計，擱架和支撐架可拆除，方便清潔，合符歐洲衛生標準。

Cabinet Base

Constructed entirely in AISI 304 stainless steel, without fitted components and completely smooth; the cabinet is mounted on height-adjustable feet also constructed in AISI 304 stainless steel.
櫃身內外全由不銹鋼 AISI 304 制造，配可調節不銹鋼腳。
